In a food processor add oats, dates, water, Organic PBfit Plus Chocolate, honey, vanilla extract, salt and process until the mixture begins to form a ball (stop periodically to scrape down sides as needed). Transfer this mixture into a parchment-lined 8x8 pan. Press down until flat and even. Then spread with PBfit Protein Peanut Butterr Spread and freeze for a few hours until firm.
When ready to coat, melt your chocolate chips and coconut oil in a bowl. Set aside.
Remove the filling from the freezer. Transfer the set filling block onto a cutting board and cut into 12 bars. Dunk each bar in the melted chocolate to coat, wipe off any excess chocolate by running the fork tines over the rim of the melted chocolate dish. Set on a chilled and lined metal tray to set and sprinkle with salt and chopped peanuts if desired. Repeat with remaining pieces.
Drizzle with a bit of the remaining chocolate if you like.
Place in the fridge or freezer for 20 mins more to set.
