
Frozen Peanut Butter Protein S'mores
INGREDIENTS
- 8 graham crackers
- 1/2 cup dark chocolate chips
- 1/2 tsp coconut oil
- 1 tub light cool whip
- 1/2 cup PBfit Classic

In a microwave-safe bowl, combine the chocolate chips and coconut oil.

Microwave in 30-second intervals, stirring between each, until fully melted and smooth.

Arrange half of the graham crackers side by side on a parchment-lined baking sheet.

Using a spoon or spatula, spread an even layer of the melted chocolate over the crackers.

Place the tray in the freezer for 10–15 minutes, or until the chocolate is set.

In a medium bowl, combine the Cool Whip and PBfit Classic. Mix thoroughly until smooth and well incorporated.

Remove the graham crackers from the freezer. Spoon the protein filling onto each chocolate-covered cracker.

Top with a plain graham cracker, gently pressing to form a sandwich.

Optional: Dip one edge or corner of each sandwich into the remaining melted chocolate for a decorative finish. Return the assembled s’mores to the parchment-lined baking sheet and freeze for at least 1 hour, or until firm.
