
Granola Peanut Butter Cups
INGREDIENTS
- Granola Cup Base:
- 2 1/2 cups PBfit Protein Granola
- 1/4 cup PBfit Protein Peanut Butter Spread
- 1/4 cup honey
- Filling:
- 1/2 cup PBfit Protein Peanut Butter Spread
- Topping:
- 12 oz dark chocolate - finally chopped
- 1 Tbsp coconut oil

In a medium bowl, combine the granola, PBfit protein spread, and honey. Mix until well combined. If the mixture is too dry, add a little more honey to achieve a sticky, moldable consistency.

Divide the mixture evenly into a silicone muffin pan, pressing it firmly into 12 cups. Use your thumb or a spoon to create a small indentation in the center of each cup.

Place the pan in the freezer for 5–10 minutes, or until the granola cups are firm.

Spoon a small amount of PBfit protein blend into the center of each chilled granola cup. Return the pan to the freezer for another 5–10 minutes to set.

Meanwhile, melt the dark chocolate and coconut oil until smooth. Spoon the melted chocolate over the top of each granola cup, covering the peanut butter layer.

Chill in the refrigerator until the chocolate is fully set.

Store in an airtight container in the fridge for up to a week or freeze for longer storage.
