
High Protein Chocolate Chip Pumpkin Bread
INGREDIENTS
- 2 3/4 cups PBfit Peanut Flour Baking Blend
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 cup ground clove
- 1/3 cup maple syrup
- 1 cup pumpkin puree
- 3 eggs
- 1/3 cup plain greek yogurt
- 1/3 cup flaxseed meal
- 1/2 cup dark chocolate chips

Preheat the oven to 350°F. Grease or line a loaf pan with parchment paper.

In a medium bowl, whisk together the Peanut Flour Baking Blend, baking powder, baking soda, salt, and ground spices.

In a large mixing bowl, whisk together the pumpkin purée, eggs, Greek yogurt, and flaxseed meal until smooth.

Fold the dry ingredients into the wet ingredients, then stir in the chocolate chips until evenly combined. Since this recipe is gluten-free, there’s no need to worry about over mixing, just mix until no dry spots remain.

Pour the batter into the prepared loaf pan and bake for about 1 hour, or until a toothpick inserted into the center comes out clean.
