
Keto Peanut Butter Cups
INGREDIENTS
- Top layer ingredients:
- 1 1/2 cup PBfit No Sugar Added
- 1/2 cup coconut oil (melted)
- Bottom layer ingredients:
- 1 1/2 cup PBfit No Sugar Added
- 1/2 cup cacao powder or cocoa powder
- 2/3 cup coconut oil (melted)
DIRECTIONS

Mix PBfit No Sugar Added and cacao powder with the melted coconut, stir till combined.

Scoop into desired molds.

Let chill for 15 minutes in freezer. While chilling prepare the ingredients for the top layer.

Mix PBfit No Sugar Added with the melted coconut, stir till comb

Remove the molds from the freezer and top with the top layer of PBfit mixture.

Let chill in the refrigerator for about 30 minutes or until set.

Remove from the fridge and let warm slightly before eating. Keep Refrigerated or Frozen until ready to serve.

Yummy adult like PB cups

I actually made this yesterday. Whilst it is a good foundation, both layers were a little too oily for my taste and really didn't hit like a Reese's cup. So I made another batch with a few adjustments. I decreased the coconut oil to 1/2 C, added a pinch of sea salt, 1/2 tsp of vanilla extract and about a tablespoon of Monkfruit sweetener (sweeten to your own taste.). For the peanutbutter layer (and let's be real, this is the star of the show and should truly shine), I increased the PBFit to 2 C, added two pinches of sea salt, 1/4 tsp of vanilla and another T of Monkfruit sweetener (once again, sweeten to your own liking- taste as you go.). This version turned out amazing. I used a silicone cupcake pan and once frozen, they popped out easily. They can be stored in a Ziplock in the freezer and thaw relatively quickly for when you need that quick sweet treat. Much healthier than a Reese's and customizable (roasted peanuts might be a good addition as well).
