In a medium bowl combine quick oats, PBfit,
vanilla protein powder, and salt, stir to
combine and set aside.
In a medium saucepan combine coconut oil, maple syrup, milk and cocoa powder. Set over medium heat and cook stirring frequently until it reaches a full boil. Allow mixture to boil for 3 minutes without stirring.
Lower heat to low and immediately add in vanilla extract and dry oat mixture. Stir mixture until well combined, cooking it another 20-30 seconds and continually stirring until oats soak up liquid. Using a medium cookie scoop or two spoons drop mixture onto lined baking sheets.
Allow the cookies to chill in the fridge for about 30 minutes or until set.
