In a medium bowl mix together the PBfit powder with water until well combined and creamy. Stir in 3 tablespoons of the coconut leaving 1 tablespoon for garnish.
Cut the apple into 1/4" slices. You should be able to get about 4 slices. Feel free to snack on the first slice and the last slice since those won't have a uniform shape.
Use a melon baller or a small circle cutter to remove the core from the apples and make a little hole in the center of each slice. You can also use a spoon or an apple corer for this step. Use a knife to spread about 2-3 tablespoons PBfit on each apple ring. Sprinkle coconut over each slice then drizzle with melted chocolate.
