INGREDIENTS

  • 3/4 cup creamy peanut butter
  • 2 large eggs
  • 1 Tbsp pure vanilla extract
  • 1 1/2 cups PBfit Peanut Flour Baking Blend
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup chocolate chips

    Preheat the oven to 350°F and position the oven rack in the center. Lightly grease two 10-inch cast iron skillets or one large skillet.

    In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until well combined. Add the peanut butter and whisk until smooth. Then whisk in the eggs and vanilla extract until fully incorporated.

    Add the PBFit Flour, baking powder, and salt. Mix until a soft, uniform batter forms. Stir in the chocolate chips until evenly distributed.

    Divide the batter evenly between the prepared skillets and gently spread or press it into an even layer. Add a few extra chocolate chips on top, if desired.

    Bake for 30 minutes, then check for doneness by inserting a toothpick into the center. If it comes out with wet batter, continue baking. If it comes out with just a few moist crumbs, the blondies are done. Check every 2 minutes until you reach that moist crumb stage.
