Add the coconut oil to a microwave-safe bowl. Heat for 45 seconds till fully melted and warm. Stir in the PBfit to the coconut oil until fully dissolved and not lumpy. In another bowl combine the pretzels, peanuts, and cookies. Pour the melted chocolate all over the mixture and stir quickly till incorporated. Do not over-stir or the chocolate may become grainy.
Add the mixture to a parchment-lined tray and spread it out. Garnish with a few more pretzels and cookies if desired.
Freeze for 15 minutes or Refrigerate for 30 minutes.
