INGREDIENTS
- 2 eggs
- 1/2 cup coconut sugar
- 2-3 very ripe bananas, mashed
- 1/4 cup avocado oil
- 1/3 cup milk
- 3/4 cup plain greek style yogurt
- 1 tsp vanilla extract
- 1 tsp salt
- 1/2 cup PBfit Organic
- 1 scoop vanilla protein powder
- 1 1/2 cups all purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup chocolate chips
- 1 Tbsp granulated sugar for sprinkling

Preheat the oven to 400°F. Line a muffin tin with cupcake liners.

In a large mixing bowl, whisk together the eggs, coconut sugar, mashed bananas, avocado oil, milk, yogurt, and vanilla extract until well combined.

Add the salt, PBfit Classic, protein powder, flour, baking soda, and baking powder to the wet ingredients. Gently fold until almost fully combined.

Fold in the chocolate chips, mixing just until the dry ingredients are incorporated.

Divide the batter evenly among the muffin liners, filling each about 3/4 full. This recipe yields at least a baker’s dozen muffins.

Sprinkle the tops of the muffins with granulated sugar.
