  • 1/2 cup whole milk
  • 1/3 cup olive oil
  • 1/4 tsp salt
  • 1 cup hot water
  • frosting:
  • 3/4 cup vanilla greek yogurt
  • 4 Tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup PBfit Classic
  • your favorite sprinkles for topping

DIRECTIONS

  1. 1

Cake: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.

  2. 2

In a medium bowl, combine the eggs and coconut sugar. Using a hand mixer, beat until the mixture is light, fluffy, and fully combined.

  3. 3

Add the vanilla, olive oil, cocoa powder, Peanut Flour Baking Blend, salt, baking powder, and baking soda. Mix until smooth.

  4. 4

Slowly pour in the hot water, mixing until fully incorporated. The batter will be thin.

  5. 5

Pour the batter into the prepared pan and bake for 15 minutes, or until the cake is set.

  6. 6

Allow the cake to cool completely before cutting.

  7. 7

Frosting: In a medium bowl, combine all frosting ingredients.

  8. 8

Mix until smooth and well combined.

  9. 9

Taste and add more maple syrup if you prefer a sweeter frosting.

  10. 10

Assembly: Cut the cooled cake to fit the serving vessel(s) you plan to use.

  11. 11

Layer the cake and frosting in the vessel, finishing with a layer of frosting on top.

  12. 12

For the classic dot-cake look, gently press the frosted top into a plate of sprinkles.
