
Peanut Butter Chocolate Dot Cakes
INGREDIENTS
- cake mix:
- 2 eggs
- 3/4 cup coconut sugar
- 2 tsp vanilla extract
- 1 1/3 cups PBfit Peanut Flour Baking Blend
- 1/2 cup cocoa powder
- 1/4 tsp baking soda
- 1/2 cup whole milk
- 1/3 cup olive oil
- 1/4 tsp salt
- 1 cup hot water
- frosting:
- 3/4 cup vanilla greek yogurt
- 4 Tbsp maple syrup
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/2 cup PBfit Classic
- your favorite sprinkles for topping

Cake: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.

In a medium bowl, combine the eggs and coconut sugar. Using a hand mixer, beat until the mixture is light, fluffy, and fully combined.

Add the vanilla, olive oil, cocoa powder, Peanut Flour Baking Blend, salt, baking powder, and baking soda. Mix until smooth.

Slowly pour in the hot water, mixing until fully incorporated. The batter will be thin.

Pour the batter into the prepared pan and bake for 15 minutes, or until the cake is set.

Allow the cake to cool completely before cutting.

Frosting: In a medium bowl, combine all frosting ingredients.

Mix until smooth and well combined.

Taste and add more maple syrup if you prefer a sweeter frosting.
