In a food processor add protein powder, PBfit, almond flour, sweetener and a pinch of salt. Blend.
Add in nonfat Greek yogurt and blend until the mixture comes together but is still slightly crumbly.
Scoop into a bowl and add in mini chocolate chips and fold till the dough comes together in a ball. Divide into 4 pieces and roll dough, gently press down and make a small hollow hole on top of the cookie. Let chill while you make filling.
In a small bowl add PBfit, protein powder, sweetener, and nonfat plain Greek yogurt. Slowly add water and stir until just combined and creamy.
Pull cookies out of the fridge and fill each cookie with filling. Melt chocolate and coconut oil in the microwave. Drizzle chocolate on top of each cookie and let chill in the fridge for 1 hour. Keep refrigerated.
