INGREDIENTS

  • 3/4 cup old fashioned rolled oats
  • 1 cup vanilla protein powder
  • 1 cup PBfit Classic
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice
  • 1/2 cup maple syrup
  • 1 cup canned pumpkin or homemade pumpkin puree
  • 1/2 cup milk of choice
  • 2 Tbsp chocolate chips

DIRECTIONS

    Preheat the oven to 350°F. Spray an 8×8-inch baking dish with non-stick spray or line it with parchment paper.

    In a medium bowl, stir together the dry ingredients: oats, PBfit Classic, protein powder, baking powder, salt, and pumpkin pie spice.

    In a separate bowl, whisk together the wet ingredients: maple syrup, pumpkin, and oat milk.

    Gently add the dry mixture to the wet ingredients and stir until well combined.

    Spread the batter evenly into the prepared dish, sprinkle a few dark chocolate chips on top, and bake for about 20 minutes, or until a toothpick inserted into the center comes out clean.

    Let the bars cool completely, then cut into 8 pieces and enjoy!

    Store the bars in the refrigerator for up to one week or in the freezer for up to three months.

Love pbfit..On weight watchers...what can I use in the recipe instead of a 1/2 Cup of maple syrup?

This bars are so easy to make and are such a tasty treat! I increased the oats to 1 full cup and it did take 45 minutes to bake through the center. Raisins make a great option instead of the chocolate too!

We started with a bake time of 20 minutes, but that wasn't nearly long enough. We ended up baking them for 50 minutes, and they still weren't done, but we were. These are super mushy, gushy and don't bake up very well. You should probably increase the oats to 1 and 1/2 cups, maybe even 2 cups to soak up more of the liquid. Maybe cut the pumpkin in half, and use half the amount of Maple syrup, or substitute half the amount of syrup with honey instead. You could probably skip the milk altogether!

Was hopeful but these are dry and crumbly. Also nowhere near done at 2pm in. Took 35min. I wouldn’t make again sadly.
