
Pumpkin Oatmeal Whoopie Pies
INGREDIENTS
- 1 cup butter, melted and cooled
- 1 1/4 cups PBfit Peanut Flour Baking Blend
- 1 Tbsp pumpkin spice blend
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup brown sugar
- 3/4 cup sugar
- 1 large egg
- 1 cup pumpkin puree
- 2 tsp vanilla extract
- 2 1/4 cups rolled oats
- Buttercream:
- 1/2 cup unsalted butter or plant-based butter softened to room temperature
- 1 cup PBfit Pumpkin Spice
- 1 scoop vanilla protein powder
- 1 1/2 cups powdered sugar
- 1/4 tsp salt
- 1/3 cup plant-based milk

Preheat the oven to 375°F. Line a large baking sheet with parchment paper.

In a mixing bowl, combine the butter, sugars, pumpkin puree, and vanilla extract. Mix until creamy and well combined. Add the egg and mix again until smooth.

Add the PBfit Peanut Flour Baking Blend, pumpkin spice, baking soda, and salt. Mix until fully incorporated, about 1 minute, making sure the oats and flour are well combined.

Using a small or medium cookie scoop (or a tablespoon), scoop the dough into 1 1/2-inch balls. Place them about 3 inches apart on the prepared baking sheet (they will spread while baking).

Bake for 12–14 minutes, or until golden brown around the edges. Remove from the oven and gently tap the baking sheet on the counter to flatten slightly, or press down gently with your hand if needed.

Let the cookies cool on the baking sheet (placed on a cooling rack) for 10 minutes before transferring to a wire rack to cool completely.

For the filling:

In a mixing bowl, beat the softened butter for 30–40 seconds until creamy. Scrape down the sides of the bowl.

Add PBfit Pumpkin Spice, powdered sugar, vanilla protein powder, and salt. Mix until the ingredients begin to come together (it will look crumbly).

Slowly add milk, continuing to beat until light and fluffy, about 2–3 minutes.

For the assembly:

Using a small offset spatula, spoon, or piping bag, spread or pipe frosting onto the flat side of one cookie.

Place another cookie on top, flat side down, and gently press together to form a sandwich.
