Valentines Thumbprint Cookie
INGREDIENTS
- 1 cup butter, room temperature
- 1/2 cup sugar
- 1 cup brown sugar
- 2 eggs
- 3 Tbsp milk
- 1 tsp vanilla
- 3 1/2 cups flour
- 3/4 cup cacao powder
- 1 tsp baking soda
- 1 tsp salt
- 2 tsp cornstarch
- 1/3 cup PBfit Cocoa
- 5-8 Tbsp water
- 2 tsp maple syrup

Preheat the oven to 350°F.

In a large mixing bowl, combine the butter, granulated sugar, and brown sugar. Whip until light and fluffy. Add the eggs one at a time, fully incorporating each before adding the next. Mix in the milk, vanilla, and salt until combined.

Add the flour, cocoa powder, baking soda, and cornstarch. Mix just until combined and no dry spots remain do not overmix.

Lightly dust your work surface with flour and turn the dough out onto it. Roll the dough to about 1/2 inch thickness. Cut into desired shapes and place on a parchment-lined baking sheet. Using your index finger, gently press a small heart-shaped indent into each cookie.

Bake for 7 minutes, then remove from the oven and allow to cool.

In a small mixing bowl, combine the PBfit Cacao, 5 tablespoons of water, and maple syrup. Mix until smooth and pipeable, adding more water as needed. Transfer the mixture to a piping bag and snip off the tip.
